Yes, Gaara die in Naruto Shippuden in episode number 17. When his tailed beast was extracted from him by the Akatsuki members, he died in the process. Later a village elder named Chiyo sacrificed her own life to revive him. According to Deidara, Gaara was dead for 3 days.
Gaara is a ninja of Sunagakure village. His father made him Jinchuriki of the one-tailed beast Shukaku when he was born. Because of being a Jinchuriki, the people of the sand village used to fear him as a monster. Later he became the Kazekage and everyone acknowledged him.
Soon after that, the Akatsuki attacked the village and kidnapped him when he was protecting the village. So, what happens to him after that? Does Gaara die? And how come he is back?
Does Gaara Die?
As everyone in the village feared and hated him so much, he started hating them as well. He used to be cold-hearted. But after Naruto defeated him in the battle, he began to see things differently. He found the light of hope in true friendship. Naruto changed him.
Later on, he became the Kazekage to protect the people of his village. But soon after that, the Akatsuki started to hunt down the Tailed beasts. And they started with the 1 tail’s Jinchuriki which is Gaara.
Appearance of Akatsuki
In the very beginning of Naruto Shippuden, a criminal organization named Akatsuki revealed themselves in front of the world. They aim to collect the all-tailed beasts to carry out the Eye of the Moon Plan. To cast the Infinite Tsukuyomi.
The Akatsuki contains over 10 official members. Two of Akatsuki members Deidara and Sasori appeared in the Sand village to capture Shukaku the One-Tailed Beast. And Gaara was the Jinchuriki of it. They faced Gaara in the battle.
Well, to be accurate, Deidara alone fought him. He fought him and attacked the villagers at the same time to catch Gaara off guard. Deidara knew Gaara will protect the village with his life. So, when Gaara was defending the village from the attack, Deidara caught him off guard and kidnaps him.
Then the Akatsuki members brought him to their temporary hideout to seal the Shukaku inside of the Demonic Statue of the Outer Path.
All the Akatsuki members perform a powerful Jutsuto extract the 1 Tailed beast. This process takes a very long time. Deidara states that extracting Gaara took 3 days and Gaara died in the process.
Meanwhile Leaf Ninjas and Chiyo we’re tailing them. When they found Akatsuki hideout Sakura and Chiyo faced Sasori in a battle. Sasori was defeated by the two of them.
How Does Gaara Come Back to Life?
Before that Chiyo tells Kakashi that it was she, with the permission of 4th Kazekage, who sealed Shukaku inside of Gaara. To take this responsibility she performs a forbidden Jutsu.
It’s a technique that was developed in Sunagakure’s Puppet Brigade. The user gives their life forces to the target. This technique can be used in both living and death. Using it on the living can save and restore the target from fatal or critical conditions but will cause the user greatly exhaustion.
But on the dead, the user will find dead. If the user’s chakra is insufficient, a third party can support it, but the only actual user of the Jutsu will die.
The elder Chiyo uses this Jutsu to sacrifice herself to revive Gaara. That is how Gaara comes back to life.

Akatsuki killed Gaara using the Gedo Statue. Deidara kidnapped Gaara and took him to the Akatsuki hideout.
Then all of the Akatsuki members together performed a Jutsu to extract the 1 Tailed Beast Shukaku. Which as a result, kills him.

Gaara dies in the 17th episode of Naruto Shippuden after Deidara kidnaps him and takes to extract his tailed beast out of him. The episode’s name is the Death of Gaara.

Does Gaara Die in the War?
Gara does not die in the war. He fought in the 4th Great Ninja war against many powerful enemies, which includes his own father Rasa, the 4th Kazekage.
He also fought 2nd Mizukage, 2nd Tsuchikage and Madara. However, he always managed to survive his way through the end.
At first, Gaara was a cold-blooded person. But after meeting and fighting Naruto, he felt the power and light of friendship. Since Naruto and Gaara both were Jinchukiri they could understand each other better.
Gaara understood that despite the fact of being a Jinchuriki one can be a good-hearted person. A killing weapon began to protect the people.
The Akatsuki captured him and killed him in the process of extracting the tailed beast. However, Lady Chiyo sacrificed his own life to bring back him from the dead using a forbidden Jutsu.
